Mini Bundt Banana Bread Recipe

I’ve been promising for a while now that I would start blogging more recipes I love… so I’m going to start now! 😉 I have a few recipes on the list to share – so keep an eye out for more to come!

Today I’m excited to share my mom’s banana bread recipe! I’m obsessed with banana bread because I grew up smelling its fresh baked goodness from the kitchen constantly as a kid… and I’m pretty sure it never lasted more than a morning in our house!

Usually I make it in a regular loaf pan, but today I decided to try making little mini breads in a bundt pan & added a little icing for fun! I’ve also made it adding some chocolate chips to the batter – so good!

 

 

RECIPE:

1/2 cup margarine

1 cup sugar

2 eggs

3 ripe bananas mashed

1 tsp. vanilla

2 cups flour

1 tsp. baking soda

 

ICING:

1 cup powdered sugar

splash of cinnamon

dash of nutmeg

add splashes of milk while stirring until proper consistency

 

Instructions:

Preheat oven to 350 degrees. Add each ingredient in order as listed, mixing between each. Pour batter into greased & floured pan.

It makes 2 loaves of smaller bread (8″ x 4″ x 2.25″) – baked 40 minutes; 1 larger loaf of bread (8.5″ x 4.5″ x 2.5″) baked an hour & 15 minutes; or 7 mini bundt cakes baked for 15-20 minutes – or until knife comes clean.
