I feel the need to share this recipe with you guys because I think EVERYONE should be able to enjoy the deliciousness that is my mom’s corn & black bean salsa!! I first had it at my cousin’s house this past 4th of July and I’m pretty sure James and I ate nearly the entire bowl ourselves.
Without further ado I give you the recipe….
CORN & BLACK BEAN SALSA
2 avocados – diced
1 small red onion – diced
3 scallions – diced
5 plum/roma tomatoes – diced
1 can black beans – rinsed & drained
1 can Green Giant “Mexicorn” – drained
1 pkg. dry Good Seasons Italian Dressing Mix
1/4 c. vinegar
1/2 c. oil
Mix all ingredients, serve with chips and enjoy!
